Healthy Mashed Cauliflower |Instant Pot + Stovetop|
If you love mashed potatoes, you are going to love mashed cauliflower. This creamy, garlicky, fluffy side dish is deliciously packed with flavors. Furthermore, this is a great healthy, low-carb alternative. Cauliflower may not sound appetizing, especially if you are used to having mashed potatoes. I also rebelled against the idea of substituting potatoes for cauliflower but wow once I gave it try, there was no going back. No doubt, Cauliflower, and potatoes are two different vegetables in texture and taste. What really gives it the taste is the ingredients you use.
Whether you make this in the Instant Pot or stovetop, this is a one-pot recipe that is super easy to make. If you are making this in the Instant Pot, it will only take 3 minutes of pressure cook time. If a pressure cooker is not available, then you can also make this very easily in a regular pot on the stovetop. Bring a pot of water to boil, add cauliflower, and cook for 10 minutes. You may also increase the cooking time if the cauliflower is not fork-tender. Add your favorite ingredients as you would normally put in your mashed potatoes or use the suggested ones in the recipe card.
I highly recommend adding sour cream. Sour cream will make your dish smooth and creamy. Once all the ingredients are added, mash your cauliflower to the desired consistency using a potato masher or a hand blender. You may also use a food processor if neither is available. Mashed Cauliflower
Creamy and delicious mashed cauliflower is an easy one-pot recipe. Not only this is healthy, low carb but also packed with flavor. The perfect side to compliment any meal.
- 1 cauliflower head (cut into florets )
- 1/4 cup water
- 2-3 garlic cloves
- 3/4 tsp salt (or to taste )
- 1/2 tsp black pepper (or to taste )
- 1/4 cup sour cream
- 1 tbsp butter
Instant Pot Instructions
Add cauliflower florets, water, and minced garlic.
Close the lid and turn the knob to sealing position. Pressure cook for 3 minutes + quick release.
Open the lid when the pin drops. Add salt, black pepper, sour cream, and butter.
Using a potato masher or a hand blender, mash the cauliflower to the desired consistency.
Mashed cauliflower is ready to serve. Garnish with chives and additional butter.
Stove Top Instructions
Bring a pot of water to boil. Add cauliflower florets, garlic, and salt.
Cook for 10 minutes or until the cauliflower is fork tender.
Drain the water. To the cauliflower, add salt, black pepper, sour cream, and butter.
Mash with a potato masher or a hand blender until the desired consistency.
Mashed cauliflower is ready to serve. Garnish with chives and additional butter.
